I received a great cookbook as a gift a couple years ago... It is "The Mediterranean Vegan Kitchen" by Donna Klein All of the recipes in it are fairly simple/straight-forward/basic with their ingredients... But it is the way each dish is to be prepared... With just the right amount of each ingredient cooked 'just-so' Which makes everything I've tried out of this book so far very rich in flavor Totally gourmet.
This book is awesome to use as a reference point If you can't think of anything you'd want to cook... But you want to whip up something pretty quick and easy... Something that is really flavorful, and healthy to boot. I used to just skim the book for ingredients ideas Then throw things together out of my own imagination from there... But the recipes left as they are in the book are truly great themselves!

| The Hanukkah meals! |

Again another gap in my updating... Mostly due to the fact that a few weeks I was so short on cash... I couldn't even afford to do a proper 7 courses.
However, I managed well at least for the holiday Shabbat's.
So here are the menus for both the fist night of Hanukkah, Shabbat 12/15/06 And the last night of Hanukkah, last night's Shabbat 12/22/06

1. ( Challah = Pumpkin Bread )
2. ( Pineapple rings )
3. ( Skillet Cabbage )
4. ( Applesauce )
5. ( Latkes )
6. ( Lasagna )

Menu for 12/22/06:
My fiance and I are getting ready to go out of town to visit some family... because of this I didn't want to cook a lot friday because we won't be here many days afterwards to eat the leftovers before they go bad. So I decided to do a fun and light idea for dinner and make it a "snack tray" meal where everything can be put into different combinations for all sorts of tastes.
1. Challah = Whole Foods Market's bakery, freshly made, Cranberry Walnut Bread
2. ( Crackers )
3. ( Tofurkey )
4. ( Mixed Veggies )
5. ( Tropical Fruits )
6. ( Hummus and other Dips )
7. ( Mint Cookies with warm rice milk. )

Usually I prefer to wait until I have made and tried everything before I update... But since I'm on here anyway updating for last week I figured I'd go ahead and post tonight's menu We'll see how it goes.

1. ( Challah = Maple Wheat Rolls )
2. Cooked carrots with a little melted vegan butter on them.
3. Steamed Broccoli
4. ( Vegan Mac & 'Cheese' Bake )
5. "Health is Wealth" brand mock 'Chicken Nuggets' (I just wanted to try these)
6. Slices of fresh organic Fuji apples
