I received a great cookbook as a gift a couple years ago...
It is "The Mediterranean Vegan Kitchen" by Donna Klein
All of the recipes in it are fairly simple/straight-forward/basic with their ingredients...
But it is the way each dish is to be prepared...
With just the right amount of each ingredient cooked 'just-so'
Which makes everything I've tried out of this book so far very rich in flavor
Totally gourmet.

This book is awesome to use as a reference point
If you can't think of anything you'd want to cook...
But you want to whip up something pretty quick and easy...
Something that is really flavorful, and healthy to boot.
I used to just skim the book for ingredients ideas
Then throw things together out of my own imagination from there...
But the recipes left as they are in the book are truly great themselves!

The Hanukkah meals! [Dec. 23rd, 2006|11:43 am]
Again another gap in my updating...
Mostly due to the fact that a few weeks I was so short on cash...
I couldn't even afford to do a proper 7 courses.

However, I managed well at least for the holiday Shabbat's.

So here are the menus for both the fist night of Hanukkah, Shabbat 12/15/06
And the last night of Hanukkah, last night's Shabbat 12/22/06

My fiance and I are getting ready to go out of town to visit some family... because of this I didn't want to cook a lot friday because we won't be here many days afterwards to eat the leftovers before they go bad. So I decided to do a fun and light idea for dinner and make it a "snack tray" meal where everything can be put into different combinations for all sorts of tastes.


1. Challah = Whole Foods Market's bakery, freshly made, Cranberry Walnut Bread


2. Crackers )


3. Tofurkey )


4. Mixed Veggies )


5. Tropical Fruits )


6. Hummus and other Dips )


7. Mint Cookies with warm rice milk. )

Apologies and a Menu [Oct. 25th, 2006|11:13 am]

Ok I'm going to apologize for getting lax here for the past few weeks.
Life's been kind of hectic...
So aside from that not leaving a lot of time to even update this
Typing all of the recipes out and what not.
It also has made for somewhat dull menus on Shabbos night...
Which probably wouldn't be too wonderous to bother typing out.
Unfortunatly I won't be able to deliver one for you this coming friday either...
As I will be having to fly out of state to go to my late Grandmother's memorial service.
But I'm trying to keep up... so here at least is my meal from this past friday.

Yesterday my soon-to-be sister inlaw and nephews came to join us for Shabbos.
They are typically omnivores
So I had to cook with that in mind
And with the picky-palate of little kids in mind
Meaning not getting too "weird and exotic"
With the flavors and content of what it was I was making.


It all went over wonderfully...
From the moment they walked in the door
They were all saying "It smells so good in here!"


So here is what we had:


1. Challah = Chocolate Chip Banana Bread )



2. Corn on the Cob )



3. Steamed Kale with Lemon Tahini Dressing )



4. Black Olives )



5. Fruit Salad )



6. Herbed Zuchini and Onions )



7. Miso Soup )

I'm trying to decrease the intake of floury foods
And increase the pure vegetable content of meals around here...
As well as eating more whole foods in general...
So this Shabbos was designed...
With the idea of making sure it contained something from all the food groups.



1. Challah = Sprouted Bread with Garlic/Olive Oil Dipping Sauce )



2. Black Beans )



3. Steamed/Boiled Collard Greens with Carrots and Peas )



4. Millet )



5. Chickpea Salad )



6. Skillet Cabbage )



7. Vanilla Tapioca Pudding with Fresh Local-Grown Peaches )



Note:
With the exception of the pudding, everything else was accompanied by a choice of organic dressings as a light topping for things like the beans and veggies and grain as desired. I had on hand a Sweet Mustard dressing and a Tahini Lemon dressing... but you can use whatever you favorites are, obviously.
